What is the maximum amount of companions you can have with you?

You cannot recruit more than 19 or 20 companions.  However, if you manage to sneak off from your companions and later find them again you could have recruited up to 19 or 20 companions in the meantime.  Also, Necromancers have no limit on how many zombies, who count as companions, they can drag along.

Thanks, 19 is pretty good like a small warband

I am trying to kill the goblins that killed my fortress can i permanently depopulate their fortress?

No, because there is no goblin fortress. If you go to the spot where they should live, there will be neither buildings nor goblins there. Toady already worked on that, you will be able to destroy their civilization in the next release.

I guess the second best thing to do would be to get ambushed by them. If you travel near their headquarters, your chance to get ambushed should increase. Just be careful: goblins are among the most challenging enemies in the game. If you run into an ambush, you'll be at a tactical disadvantage, so be sure that you can handle them.
On the other hand, if you can win the fight, you'll have experienced the closest to an actual war that is currently possible in the game, you'll have tons of weapons and ammo and if you can kill the goblin leader, he'll stay dead.

Does loot in the forts scattered about the world change between adventures?

Or if my fully-steel-clad dorf dies in the middle of nowhere, is that permanently two less +Steel Chain Shirt+s, one less *Steel Breastplate*, one less *Steel Greaves*, two less +<<+Steel Low Boots+>>+, one less +<<+Steel Right Gauntlet+>>+,  one less +<<+Steel Left Gauntlet+>>+, One less +Steel Helm+, five less +Dingo Leather Cloaks+, two less +Steel Battleaxe+s, and twenty fewer +Steel Shields+ in the world for future adventurers to discover (Barring accidentally stumbling across my corpse?)?

And are steel shields really better than lighter shields?

The equipment of your adventurer stays at the place of death. If you want to recover it, you'll have to find the corpse.

And steel shields don't have a better blocking chance than wooden shields, but since they are heavier you can bash better with them. If that's important to you.

Dwarves use their beards to influence the adamantite to change form. A dwarves beard is specialized in his job, therefore a legendary miner has a much better mining beard then a legendary weaponsmith, who has a beard that influences metals to make armor much more.
This also explains why dwarves can have a city on just a soap pillar, the beard of the soapmaking dwarf causes the soap to become rigid.

An artifact chair. ;)

Actually, I think artifacts grant a skill bonus, so if you find an artifact shield, you are pretty much set.  Otherwise, if you discount bashing, then they are all equal.

If there is a difference in superhuman levels how do I see where a character falls out?

I have had characters with 1700 speed unburdened at superhuman, and characters with 1500 speed unburdened at superhuman.  I think there is a number that describes your agility, and it can vary over a pretty unlimited range in both directions, though I think it has both a cap and a floor.

I have never seen an adventurer with less than 99 speed.  And that was when I was carrying the world in my backpack, sneaking, swimming, and laying down.

There is a number determining attributes. All attributes range from 0-5000.

Anything above ~2500 is reported as "Superhuman".
