If the suspect turns out innocent, the crime is looked over and it is decided nothing happened. The only suspect is the one in court. It will be like nothing ever happened if they turn out innocent.
That doesn't make a lot of sense. Nobody's going to get arrested in the courtroom, sure, but the stolen jewelry won't magically reappear in the store, and depending on how much the jewelry was worth the police are likely to try and find another suspect. Doesn't matter much for the game, though.
