You can't milk cows, but there is another animal that is supposidly milkable.
I think dwarves won't milk cows for the same reason they won't farm outside, it's just not their style!

Purring maggots are milkable in the edit files but I've never been able to catch one to prove it.

Has anyone actually managed to catch a purring maggot to test this?  I've accumulated a huge animal depot full of tiny cages with things in them, but haven't seen a purring maggot at all.

Maybe Dwarven Caravans should have them for trade occasionally, if they're a dwarven farm animal?

but the problem here isn't the milk part, it's the turning milk into cheese bit.

Never had problems with making cheese, only with making my dwarves stop to make cheese (the milk didn't seem to be used up). But this was a few versions ago, so maybe something has changed since then.
The kitchen screen isn't that usefull in this case, as it doesn't show whether the milk is actually available for a job, but a barrel sitting on a stockpile *should* be recognized by your dwarves. Maybe just wait some time, just in case the barrel is for some reason reserved for some other job, though I've no idea what this could be.
Other than that just check the usual suspects:
- workshop isn't blocked
- milk isn't rotten
- barrel isn't decorated

no - dead happy to make pigtail threads
no - in barrel
no - not decorated (at least 1 of them is not decorated anyway.. didn't bother finding the other ones)

job?.. possible.. though i don't know what else they are going to put into a "cow's milk" barrel aside from milk... and since there's no milk i could have got from anywhere from merchants.. which come in their own barrels......

Yeah, if all that's fine it should work.  I can look at the save if you like:

toadyone@bay12games.com or someplace downloadable
region#.sav + region# folder in some kind of zip/rar

For the dwarf milk animal, have you been trapping the chasm?  I don't remember if you can actually place traps on the chasm squares, but it's something like that.

savegame for no cheese (should still not be making any)
http://www.badongo.com/file/1479270

.. might also want to look at the dwarf named "army V" got a neck wound, brown.. (from smacking snakeman.. well.. 2 of them smacking a snakeman, could be friendly fire i suppose) but not actually resting..

---
ps.. this save now has no free bin or barrel or wood.. so it might not help much... if those containers are needed to make the cheese (there were tons of free containers when i 1st tried)

pps.. what is glass box?

A glass box is like a chest or coffer, but it's made from one of the glass types.

I'll look into the cheese situation tomorrowish.

right.. does it act as a chest or coffer? or something else totally? (in terms of what it stores)

It acts as a chest/coffer.  So you use it in somebody's room for personal storage and place it with the same command.

You need to set your cow's milk to "cook" in the kitchen.   This wasn't clear of course.  Also, there isn't really room for a ton of options, but since milk can be both cooked and made into cheese, there probably should be more.

The soldier probably isn't resting their neck because the neck never heals.  "Neck" in this sense means a spinal injury.

don't coffer and chest hold different things? - only reason why i'm chucking both into a room, even though i haven't start with economy yet...

or do you mean the box holds both coins and clothes or whatever it is that chests hold?

ps.. thanks.

"coffer" and "chest" are just material based names, but the objects act the same, as do "boxes".  "cabinets" hold clothes.  coffers/chests/boxes hold everything else, including coins.  coins for the coin stockpile go in bins.
