Exsanguination, Does this mean what I think it means?

"Troglodyte blood has been sucked from the wound!"

Something very scary was beating up some cavern creatures, but I was previously unaware of this method of attacking.  Could this mean vampires are coming?

It would appear so. Apply generous amounts of magma. Or capture. For science.

Then lock it in a room near your trade depot. Unleash on elves. Profit.

I had a nightbeast (nightwing?  idk) suck blood from my adventurer to heal itself.

That does sound distinctly like the Dwarf Fortress mission statement.

But on topic, there are some monsters that do suck blood, and you can die from having too much blood drained. However, I can imagine that armour, axes and of course magma will keep you pretty safe.
