Maybe wear fine fire-proof caps underneath it?

You could make it a syndrome that comes off the metal but doesn't effect dwarves. I'm not entirely sure that you can do this, but I know you can't make dwarves wear new clothes unless they're in the military.

If you remove fat from dwarves, they won't catch on fire and melt.

The actual dwarf does not catch fire, is it his clothes that do. But removing fat would help them not melt.
After a while though, they will have heat related injuries.
