Toss up between glassmaking. Find magma and BAM, infinite materials or ranching. Had me a hydra ranch one time...9 heads makes them an unsurprisingly good guard animal. That and the mental image of what it looks like when my army charged into battle with each soldier's 2 assigned war hydras was priceless...lol

Power plant! I don't like water reactors, so usually I dig long wide channel from aquifer or undergroumd sea to drainage and build massive waterwheel sets. they give me thousands PowerUrists each. Then time to think about usage of all that power...

Chinese Elven sweatshops of rock crafts. Plus pitchblende eating utensils, kitchens and thrones. For the nobles, you see, only the best.
