Oh, actually, gotta change my vote to the Ottoman Empire.  Age of Empire's Janissaries left a lasting impression on me.  And, more recently, great bombards, heh.

Are you using Magna Mundi? If so, play a Japanese minor. I installed the Japan quickfix for Magna Mundi, which made conquering Japan nigh-impossible, so I gave up on it.
