The symbols here, what do they actually mean? I know that those marked with TSK are the quest targets, but then there are other symbols too. I searched the forums and the wiki but couldn't find an explanation. A complete list would be nice.

Its actually quite simple - Its green grass. The grey dots are rocks.

Well, basically at least.

 Those symbols tell you of nearby settlements, caves, camps, etc.  It also lists any active tasks you have been given, regardless of their proximity.

The green lines are plowed fields, the grey dots are caves.

The ae's (big and small) are small settlements, the yellow stars are camps, the +'s are towns (where the shops are), the o's are keeps.

I probably missed a few there, but those are the major ones, I think.

Doh. I thought it would pin-point the locations of all the huts in the village. So I went to find the location of one of those grey dots. I found a troll cave. The troll kicked my skull in.

I have tried to find entrances to mountain homes using the symbols but I always end up going circles around the mountain. Can I only enter human villages?

What's with the colors of the compass directions then? Light colors means the place is near and dark ones are further away?

The "mountainhomes" as such actually don't exist. They were removed (before the other towns were removed) as people found them utterly impossible to navigate. At that point the residents would just stand about in the open, but I don't know if they even exist at all in the physical sense currently.
