Would Mail Order Monsters qualify? If you think about it, it was basically glorified dog fighting, only with genetically-enhanced Ameoboids and dinosaurs instead of dogs.

I actually know a guy who made a chicken fighting game a few years back. I'm not sure where'd you could find it though.

Hm, is it weird that this makes me think of Deer Hunter?  Well I think it's probably weird that I'm thinking of Deer Hunter 2005 which was actually a pretty cool stalking and tracking simulator.  You spent much more time finding the deer than you did shooting them.  I wish I had the full version of that.  It was pretty cool.

I got the mental image of the "dogs playing poker" picture but instead they are around a pit containing naked men with spurs.

Dwarf Fortress Arena Mode comes to mind. And there are all sorts of creatures you can toss in there, with battle reports, and you can make your own.

And considering earlier suggestions, now a Pokemon Arena DF mod (for Arena Mode especially) comes to mind. Unfortunately, I'm not savvy enough (modding and Pokemon-wise) to mod it in. But I can imagine battle reports would be hilarious.
