I swear nothing I do makes any of my dwarves become better wrestlers...

Or does Dwarf Therapist not show the military training well?

I am about 2 years into a fort, I have 10 people training being lead by a novice wrestler.  They have no weapons and I have them armored up, but they mostly stand around the whole time in the barracks even though I have it set on train for the correct squad and have the squad activated to train.

Thoughts?

Check their status with [v]iew, see what their current jobs are.
Also, it's good to go to the [m]ilitary screen, then the [ s]chedule and set the minimum training number to slightly less than the number of dwarves in the squad.

This is sound advice, however, I have to question the OP's motives:

Why would you want Wrestlers? They do not stand a chance against an armed opponent.

A wrestler is good for occupying an opponent by forcing them to waste rounds breaking grips and locks, so that they don't cut someone's head off every time they move.
That said, an all-wrestler military is... Lacking.

I find that by never having enough gear for my dwarves, they're all at least novice wrestlers, which gives the a chance to pin down enemies that have knocked the weapon out of their hand (once they do have correct equipment). It works quite well.

I agree with Urist. Steampunk is like Darth Vader winning Holland's Next Top Model. It would be awesome but not something I'd like in this game.
Unfortunately dying involves the amputation of the entire body from the dwarf.

They may train other skills such as fighter and dodging. Most of my people are 'novice' at their weapons but have an extremely high fighting skill, making up for it.

Occupying an opponent is a job for pets and war animals, imo.

What did you construct your barracks from, OP? If it wasn't an armor rack or a weapon stand, it might be a bug. I also recall reading that smaller squads train up faster, with 3 or 4 being optimal. Are your dwarves carrying weapons? They might be trying to train weapon skills instead.

If all else fails, you can make it a danger room and get them all to work on their defensive skills.

Having a 10 man squad (assuming your schedule is set to train 10 dwarves at a time) is difficult, because they won't start demonstrations or other training unless all 10 are in the barracks at the same time.... which is 'impossible?'...  Generally its advised to lower the number of dwarves scheduled to train in the schedule menu.  You could maybe alter their schedule to not sleep or eat or carry food, and then burrow them into your barracks, and force all 10 to train that way.  Although you would still have a problem as some of them might pass out on the ground, and you would have to unburrow them so they could eat and sleep.
