My jaw always pops when I open it wide enough. Then it has to pop again when I close.

Maybe you should stop trying to eat giant burgers.

Does this run in your family?

https://en.wikipedia.org/wiki/Hypermobility_(joints)

One of it's symptoms can be
https://en.wikipedia.org/wiki/Temporomandibular_joint_dysfunction
not sure if your symptoms match that though, since you don't mention any pain.

EDIT: wtf, I cannot get the first link to correctly make the last parenthesis part of the link

On a related note, I've discovered that it I move my lower jaw in a specific way I can make a sound like cracking knuckles. Doesn't hurt though.

Same here. I've had this issue for nearly all my life. Doesn't hurt, for the most part.

Popping joints is great fun. Except my elbows, it's usually quite painful when I have to do them.

I think I was doing that at one point. It became somewhat of a habit and was causing my jaw to get tired and click while I was eating.

I have that! When I took martial arts it frustrated the instructor because a lot of holds don't work on my because my joints are stretchy. You can still immobilize me but there's no pain.

At once point he was like I'm not going to try any harder because in theory this should have dislocated your shoulder.

Same here. My one sister used to get very annoyed at me at the breakfast table, because it's much stronger in the mornings. She has it too - her orthodontist at one point told her not to do it on purpose, because it wears out the ligaments. And you definitely don't want to have to explain to a nurse why exactly you no longer have control over the lower half of your face.

Well, technically speaking, if you couldn't move your jaw, you probably wouldn't be telling the nurse much of anything beyond "OOOOOoooo. AAhhhhhhhh. Glaaaaaiaaaa"

I desperately want to turn this into a hello nurse joke, but I just ate dinner and all my brain power is in my stomach. Just imagine it was here and you were entertained it annoyed as appropriate. Thank you for your consideration!

This must explain why I am attracted to Snek.

I think me and my family have some of that hypermobility going on, but nothing as extreme as bending my thumb over to my wrist. Opening my jaw all the way doesn't hurt at all, but I can feel the joint changing position a little.
