Facts! But nobody knows about Guanciale....

I am intrigued, and will try it if I ever visit some place that sells it.

To sum it up quickly, it's basically.... it's either Italian ham, or bacon, I can't remember. Tastes pretty good, if a bit salty.

It's not so bad. Here in the developed world, there are lots of alternatives. For instance, instead of being prescribed Ampucillin for bronchitis, I get Zithromax instead. *shrug*

Basically pancetta is pork belly and used like bacon. Pretty easy to find

Guanciale is like bacon but made of the pig's jowls and much more porky in flavor. It's also much more obscure and sold by high end delis or Mario Batali restaurant or a high end Mario Batali restaurant deli

I said "mold on", not "mold (or yeast) involved in the making of". It's like the difference in using beer in cooking and just drinking beer.

Err, actually, a number of beers actually have yeast in them. Even living yeast, sometimes. Especially upper-fermentation ones, because there they stay in the solution instead of falling to the bottom.

Btw, the mold in blue cheese is in fact, Penicillin, one of the 'good guy' molds. http://en.wikipedia.org/wiki/Blue_cheese Unless you happen to be allergic to that type of mold.

Penicillium roqueforti to be precise, at least in the case of most blue chesses.

While I agree bacon is a bit overdone in media hype the last few years, throwing up seems a bit extreme. And don't knock stilton until you've tried it!

funny thing, i'm eating black pudding right now which is considered by some to be absolutely disgusting but i find their tastes to be absolutely disgusting which is a rarity because it deviates from the staple of being bad and they should feel bad

Just wait until you have to cook a metric ton of it in the microwave that's constantly blowing it's ventilation fan in your face while you're trying to work and not get nauseous from the OTHER, less nauseating smells at work.
It's the worst meat ever. Worse then seafood, which smells like semen to me.
And the taste, when you buy a sandwich that you didn't realize has bacon on it and bite in, it's just awful. Like someone burnt a whole cow into a thimbleful of ash and then salted the ash and mixed it with greasy lye, then pressed it out into thin strips and called it popular food.

I've only had black pudding once, at a hotel the morning before a flight, but it was really dry. It's not really representative of black puddings, so I'm still open-minded about them.
