Generally speaking, yes. There have been theories by various other philosophers, for example Anselm (Ontological Argument) but most of the philosophy still seriously discussed today comes from the Greek big Three.

And the British empiricists! And let's not forget the French philosophers of the Enlightenment, and the likes of Sartre and Camus...

The course is about philosophy in general, and all those nice different schools of it, which definitely should include non-Western ones. I'll handle the matter myself, taking it up the chain and such, I don't really need advice on it. Really, let's not descend to a flame war over this.

That may be true, but have you looked at other courses in your school? I know that at the community college I attended, Eastern philosophy was a second semester course. (Which I didn't see much of, since I suffered from a great deal of social anxiety at the time and didn't attend any classes after I was late one day, and I was afterwards too embarrassed to come into class, though I read all of the book for the class.)
