We do cheese fries in the northern midwest of the us. Instead of cheese curds, we get cheddar cheese sauce. Lots of it. Also, we 86 the gravy. Gravy is only for mashed potatoes, not fries.

One might consider chili to be a type of gravy for sufficiently abstract definitions of gravy. In that case we do have poutine in America in the form of chili cheese fries.

... and gravy goes fine on fries. Good, even, though I'm not really that fond of gravy. Not so sure about cheese curd, because... I don't think I've ever ate it.  Something about eating a thing called curd... curdles my appetite. But cheese and gravy on fries? Sure, I'd eat that. Have ate them both apart, no reason not to combine. I don't think they'd explode under normal circumstances, and combustion is my primary combination filter.

Not just meats! There's various sorts of vegetable gravy, too. I... I want to say I've had potato gravy before, with it turning out goodly, but I could be misremembering. But yeah, you can have gravy without needing meats. Gravy for everyone!

A) What kind of chips are you talking about? Like, British chips? We call those "fries" or even "wedges" in 'MURRICA. B) Cheese is a multiplier. Something is okay? Add cheese. It becomes pretty good. Something is awesome? Add cheese. It becomes OMFGWTFBBQ incredible.

Okay then, fries with cheese on are the things I was talking about.
And cheese does not make everything better. It's either really fatty or really strong or both. That doesn't go with a lot of things.
