What'd be really freaky would be for one of the heads to have a stroke and die, leaving it hanging around like a rotten fruit. That assumes individual circulatory networks for each neck/head, though. Come to think of it, a hydra must have a pretty damned strong heart.

Or many of them. I'd imagine redundant hearts, probably in the lower neck (so more come in as it gains heads, but they're less vulnerable to decapitation). Then maybe a particularly strong one (or several) in the main body. Or some other means of managing a circulatory system, I guess.
