I USED to love baked potatoes. Now I can't stand them. Far too bland for me, and fillings don't last that long since they're only in the middle and can ooze out easily.

The trick with seasoning is to basically cut irrigation into the potato. Slice it in half, then do a kind of grid pattern along the open sides, just deep enough to not cut through the skin. Then apply seasoning, especially if it's less solid (meltable, as with cheese, works as well). The taste suffuses the entire potato, and all things are wonder and glory.

Mind you, I tend to treat baked potatoes as finger food these days, but that's neither here nor there.

There's only one topping that is needed - butter and salt. It and only it transforms the baked potato from merely good to amazing. No cheese nor some fancy salsa or whatnot can equate to the transmutative power of butter.
Slice in half, put a knob on top, let it melt and be absorbed. Sprinkle with salt and prepare for the taste of heaven.

Soy or teriyaki sauce is my preference. Whatever your favorite sauce of that sort is, really. Don't eat much butter these days, personally, and liquid sodium is better at getting in all the nooks and crannies.

Baked potatoes? Mashed potatoes? Blech. Useless.

Anyway, whoever thinks that vegetarian food is just boiled vegetables and tofu has never walked into an indian restaurant.

I think the problem is when people used to eating meat try to make vegetarian food and have no idea how to do it and just end up making tasteless mush with no nutrients.
