Seems like a very short amount of time for a lever to stop a building destroying, trap avoider before it busts through that door.

Is the pressure plate activation of the door almost instant?

Yes. 1 in-game step for doors and floor hatches (it takes like 10 for a dwarf to move one square). I have 5 levers scattered about the most populous areas of my fortress to hopefully allow rapid pulling of the lever. I am also gonna put in a bridge to block the path in case that fails.
