I was curious, I was building out into the ocean + various projects when I noticed something peculiar, I could not fish off them, even if there were fish right below them!

Is there no way to fish off built platforms? Or must it always be from the shore? It was kind of devastating to find them when I planned to survive purely off of fish with my ocean floating fortress.

Did you define a fishing zone?  I hadn't actually got around to trying this myself but that's what I'd try.  How high over the water is your platform?  If there is any empty space between fisher and water, I don't think fishing will work.

My dwarfs love fishing off platforms I've built right against the water.

By 'fish right below them' do you mean you could visibly see fish swimming around in the water?  If so, that doesn't mean anything.  The ability of a fisherdwarf to get fish out of a body of water is completely unrelated to the actual presence of fish creature or vermin swimming around in that body of water.

Seeing fish icons does not necessarily mean there are catchable fish there. Try setting up a fishing zone. If the result is 0, no fishing will occur. If the number correleates with the size of the zone, its okay. No murky ponds on the otherhand as zoness..,
