How do i Butcher corpses?
I have my Butcher shop right next to my Refuse pile. When i select to butcher a dead animal or extract from a dead animal, it says in the anouncements that the task was canceled: "Needs Butcherable unrotten nearby item"

They should butcher bodies automatically.  You might need to hit (o)-(r)-(o) to get them to put bodies outside into the stockpile. 

Also, what are you trying to butcher?  Which corpse aren't they noticing?

They arent butchering rats, roaches, lungfish, lizards and toads.

What do i do with vermin?
Lungfish and Toads dont work for the Fishery either.

Toss it in the rubbish heap till it decays away.  Vermin just aren't good for anything, aquatic vermin included.

Damn, that sucks. I wanted to make a vermin bat and make my dwarfs Urist McOzzys.

Oh, don't worry. I think they still grab vermin in animal traps for a snack, which they eat live.
