So I started my second fort (First one was really bugged. Never got attacked, ever. Maybe everything was wiped out) and underneath me is a huge amount of water, I'm having trouble going down levels when finally I find a dry spot.

Every level I go down I'm finding ore, precious stone, gold, gems... all of it XD

Well! I call it luck.

If you're playing version .13 or .14 you won't get attacked this fort either. 
Sounds like you found a gap in the aquifer; they don't always span the entire embark.  Mineral wealth at the moment is ridiculously easy to come by, so it sounds pretty normal.

I had gobs of diamonds once, because I modded in a rock layer and accidentally added large clusters of kimberlite to it.
