My next fortress has to be next to a good ocean biome with mermaids modded to be milkable.  And I will have dwarves eat nothing but Mermaid Cheese and Dwarven Beer.

Add Quarcain to that list ;D (quarry bush leaves (10)x3 and mermaid milk  roasts... O_O)  Make sure that the value of the cheese scales up at the same rate as all mermaid parts.

Someone should mod whales to be milkable...then create a whale farm and base the dwarven economy solely around whales.  whales and plump helmets.  :D

Hmmmm, I kind of like the idea of designing an offshore platform for milking aquatic mammals. And then you can devastate the ecosystem with a giant milk spill.

We must enlist the help of the modders in designing an aquatic milking/training platform! :D 

and this raised a question in my mind; can animals be required as a reagent?

Epic threads have no lifespan!  :P

I now want to build a fort with an economy SOLELY based on meals prepped from sunshine, dwarven cheese, quarry bush leaves, and sweet pod syrup.  My dwarves will drink sunshine and dwarven rum (?)  I just need to make purring maggots embarkable again ;)

I rarely bother with cheese, because I rarely bother with milking my animals. Usually, most animals get locked up sooner or later. I don't want them breeding like bunnies, crowd the meeting rooms or take up FPS; it'd be really nice to have a working "animal enclosure" that they are happy to stay inside of. Anyway. There is that annoying bug  that makes dwarves play tug-of-war with animals being taken out of a cage or off a chain for milking: one wants to milk, the other wants to put the animal back. Even with the cage/chain built by the farmer's workshops, this really annoys me because it's a waste of time watching the stupid dwarves go back and forth with the stupid cow for minutes.

So, yeah, I generally don't make cheese. I may import milk to save myself the hassle of milking and get a free barrel out of it to boot, and then the dwarves can have cheese unless I forget to assign that labor because I have everyone busy hauling junk.
