I found a giant vein of the flammable stuff! now.. what do I DO with it, trap wise? I heard some people talk about paving their trap corridors with it, and pouring lava on it. But I'm not sure how to make that work.

Give cats natural metallic armor and throw them in your danger room.  Also allow their mouth and tail to grasp (shield in mouth, weapon in tail xD)  Have a cat based military.  You know, do the same with all tame animals xD send in the cats as shock troops to disrupt the archers

If you ignite a lignite floor, it will stay burning for eternity.

If you ignite a lignite floor, it will stay burning for eternity.

Even water won't put it out?

You can't ignite constructions. Try to maneuver a moody miner or mason into using it as a base material. Then build the artifact lignite furniture in your entryway and light it up. If it's a grate, build it as a floor grate on a one-tile-wide hallway..

Are the fortresses there for psychological reasons?  Are they trying to hold back entropy itself, rather than the goblin hordes?

It will, but you don't want to accidentally build it and have a dwarf come in contact with it, do you? You can engineer an entrance so that your dwarves will not go through it, but goblins will.

We need a way to ignite stuff other than magma. Pumping magma 60 z-levels is big work just to light up some lignite walkway....

I've heard that roads CAN be ignited, but I haven't tested it myself.

roads and floor grates work, as do hatch covers. I am not sure of what else, this is all I can think of without opening the game...

Someone already modded that, yes. A workshop that produced fire on demand.
