My dwarves have become lazy, what to do?

Exactly what the title says. This problem is especially annoying with my carpenter, since I gave him jobs in winter and he still isn't doing it. It's spring in my game right now. He has carpentry enabled as a labor, so I really don't know what to do... My miners are ok, my farmers are a bit slow, my carpenter only moves stuff in stockpiles, once in a while. So, what am I doing wrong?
Also, the entrance to my fortress is on a hill. Will attackers be able to climb the hill thus getting to my fortress?

Disable all other labors, such as hauling.

If that does not work, he just volunteered to test your traps.

Give cats natural metallic armor and throw them in your danger room.  Also allow their mouth and tail to grasp (shield in mouth, weapon in tail xD)  Have a cat based military.  You know, do the same with all tame animals xD send in the cats as shock troops to disrupt the archers

Ok, it turned out that he only refuses making animal traps. I wanted to make some of those because when I set the Fishery to capture live fish it cancelled because it needed empty traps. So, why can't I make animal traps?

Carpenters do not make animal traps. Trappers do.

Also note that I believe you need glass terrariums to capture fish.
