When ever i Melt down some Narrow Steel from a goblin siege (Ballistas FTW!) all i get is copper, currently i have well over 100 bars of copper from 4 dead goblins

come to think of it, There are a lot of bars too, are there normally a load of bars?

Silly question, but have you been smelting copper ore? Do you have a bars stockpile?

It's possible that your smelter is just overflowing from previous jobs and the steel bars you are looking for are several pages down.

no i had specifically set the smelter to melt down a metal object, and after the whole smelting thingy, my stock had no steel bars, only copper and rose gold (which i had bought)

Have you set the items that you want to smelt to "smelt"?
Can be done from the stocks menu (z). I did that once with a whole load of copper junk my smith made in order to get more proficient.

there might have been a small bit of copper equipment in there, but not over 100 bars worth
