probbaly posible, but it's not advisable. Animals arn't pizzas: just adding evrything thats good in SOME context dosnt result in anything good at all.
Neither the parasitic state nor the plantlike stage would benefit much from that kind of armor.

chitin is translucent in it's basic form, and the tentacles should of course not be covered in it.

Also, just to check if I go this right and sugest it if it's not alredy true, and sugest it's made official if it is so that adaptations can be easily aimed at a single of the stages, our lifecycle is:
1) infected/poison cells, that grow in a host to...
2) parasite stage, that takes over the mind of some animal and use it to get near other animals that we then infect using tentcles we grow outside the animal
3) stationary stage, entered when the host dies and/or there are not enoguht hosts around, that is not as good at infecting things because it can't hunt after than, but much less likely to starve.

That would be our current lifecycle, yes.

so you are going the way of fungal Tyranids Mind-control Plum-helmet men.... ok!
is developing a chitin coat possible right now?

Fixed.

You specialize your tentacles and leaves, giving them the ability to hide when you want them too. Mind you, it leaves some odd-looking sores on the 'host', but should fool most animals.

Fungus 2.2:

Specialized cells:
Body cells: Lean, Grippy
Poison cells: Reproductive Poison
Green cells: Great Chloroplasts (+2.0 food a turn)
Neurons: Great Connections
Chemical Neurons: Okay reactions. Parallel thought.
Sensory nerves: Has tiny hairs that allows you to (barely) hear.
Fat cells: Stores food.
CONTROL CELLS: Okay control. 'Kinda control where they go!' mode only. No way to communicate with infected.
DNA stealing cells: Kinda works.
Trapdoor cells: Helps to hides your leaves, tentacles by pulling them into the host. Mildly effective disguise.

Organs:
Brain: Bit bigger.
Chemical brain: More effective then your regular brain. Parallel thought. Good Chemical memory.
Poison tentacles: Made out of poison cells. Poisons everything they touch. Seriously guys.
Leaves: Made out of green cells. Helps to hold food. (Additional +1.0 food a turn)
Hyphae: Anchors yourself to the seafloor. Very fine, helping you to anchor to the seafloor.
Roots: Further anchors yourself to the seafloor. Supplies nutrients to help survival.
Eyes: Allows you to see better.

Try producing hydrogen gas in a bladder-like membrane. Flying jellyfish FTW!

You decide to swim over to what looks like an eye and infect it.

Wait a second. Why aren't you moving? No, wait, it's just really slow for some reason. Odd.

You spend several minutes, slowly moving forward, enjoying the feel of the bright, white sunlight on your leaves.

With a splash, you fall fowards.

Woah, what just happened?
