You decide that being immobile is kinda okay, and create some 'roots' to get some nutrients from the ground. You also create some ears, to hear with.

You specialize some cells to store energy.

You improve your hyphae, brain, tentacles, and leaves.

But most importantly, you specialize in some cells that will allow you to TAKE CONTROL of any CREATURES that you INFECT. (Why someone hasn't suggested this for this round of evolution, I have no idea.) Mind you, it's more 'let's wander aimlessly!' then 'Do my bidding, slave' But at least it's a start. (Plus, it should help you to spread.)

Fungus 2.0:

Specialized cells:
Body cells: Lean, Grippy
Poison cells: Reproductive Poison
Green cells: Great Chloroplasts (+2.0 food a turn)
Neurons: Good Connections
Sensory nerves: Has tiny hairs that allows you to (barely) hear.
Fat cells: Stores food.
CONTROL CELLS: Terrible control. 'Let's wander aimlessly!' mode only. No way to communicate with infected.

Organs:
Brain: Bit bigger.
Poison tentacles: Made out of poison cells. Much better chance to poison things.
Leaves: Made out of green cells. Helps to hold food. Helps to see. (Additional +1.0 food a turn)
Hyphae: Anchors yourself to the seafloor. Very fine, helping you to anchor to the seafloor.
Roots: Further anchors yourself to the seafloor. Supplies nutrients to help survival.

Infect whatever passes by and test just how much control you have over your new unintelligent minions.

It's known as the Oppai-Kaiju effect. The islands of Japan generate a sort anti-gravity field, which allows breasts to behave as if in microgravity. It's also what allows Godzilla and friends to become 50 stories tall, and lets ninjas run up the side of a skyscraper.

You wait for a random fish to pass by, and infect it. Success! It's now behaving different than it was before. Its more agitated, its eyes are unfocused, and it just pissed itself. Of course, you have no way to control what it does, or even to comunicate with it, but meh. Evolution will take care of that.

You can specialize one more cell, create one more organ, and improve two cells/organs. Any improvements have to be linked to the CONTROL, so that this game doesn't drag any more than it has too.

Improve roots twice.
Create simple eyes.
Specialize some of the poison cells to increase your hold over your mindless drones.

We already have a brain, why would we need a second, slightly worse one?

Because two brains is better then one!

Or maybe there's a god who's just completely insane and sends you to Detroit, Michigan in a new body if you ever utter the name "Pat Sajak".
