This is a newb question, it's only my second day playing this game, but my eyes are sore from it already as it is addictive.

I saw some Olm people and couldn't help burrowing down to check them out, even though I don't really have my miltary figured out yet.

Now even though I'm about 3 floors above them, and they are at the bottom of a cavern, when I burrowed down into the roof of the cavern they started interrupting my dwarves, and now pretty much all my guys are stuck in a loop. They are going down to the cavern roof to collect stuff to store it, and getting interuppted by the olm people. I don't think anyone is getting hurt, but what I want to do is to remove the stairs and block the cavern off again. My miners are trying to remove the stairs but they get interrupted to.

I've also tried walling off the area higher up, or using forbid to stop them going down there. Not sure what to do. I want to tell them all to just leave that area alone until I figure out what to do.

d-b-f the things they are trying to collect, work out a plan once your dwarves stop getting themselves stuck.

Confine them to a burrow on a higher level?

Using a traffic zone wont stop them what you can do is build a door and then set it to forbid.

Cover the hole in the cavern roof with something.  A hatch would work, or if you made it with up/down stairs if you construct up-only stairs (b-C-u) on them then it gets rid of them.  Or so I've been told.

Your dwarves will be spooked whenever an enemy is in line of sight of them regardless of the enemy's actual ability to get them.

I totally agree....best way is to seal the stairs with a floor tile

Update: when I went to try this I found a couple of my dwarves had died of thirst down in the cavern roof I just walled the whole room off from above and later they went off and a cloud of miasma filled the room.

Make sure you don't floor over a staircase leading up which would strand your dwarves.  If you construct an upward staircase over an up/down, it effectively acts like a floor and lets dwarves go back up.
