Hot Sauces

Does anyone else use 'em? I'm sure others are just as crazy about hot sauces as me.

What are your favorites? What do you love to put it on? How much heat can you take?

Personally, my favorite is homemade vinegar-based hot sauce which goes real good on pizza.

However, Blair's After Death is good for that wonderful mouth burning heat.

Blair's is pretty deadly. Busha Browne has some good shit too. Currently working on some hot sauce a Mexican friend made me and I mean holy shit, I don't know what she did, but I can hardly make a dent in the stuff. Honourable mention to Tabasco Chipotle and Tiger Sauce for being not actually spicy, but just goddamn delicious.

The only sauce they sell here is Tabasco. I love Tabasco, and hot sauces in general. I should try making one.

I use cayenne pepper and/or tabasco sauce on pretty much everything. All sorts of meat, fish, and pizza. Not on vegetables though.

Amazing. I was thinking about making this same exact topic.

My favorite brand is Frank's RedHot(which I think is cayenne). I love this stuff, I'll put it on almost anything. Mixed with butter, it goes perfect on potatoes, or for hot wings. I've had it on pizza once, and it was surprisingly good(wasn't expecting it to be).

I really only like it on wings. I like hot sauce, but I don't eat, say, pizza, because I want to know what melted cheese TASTES LIKE WITH FIRE.

Sort of like I don't put wasabi on everything. It just obliterates flavors for the most part... a lot of commercial hot sauce products, especially.

Yep.

I don't mind cheap hot sauces though. Some of the home-brewed ones are overpriced crap, and given my opinion of hot sauces, one liquid that burns your mouth is the same as the next.

There are a few brand I've run into that have uniqueness in ingredients or texture.....but by and large most hot sauces are made from an emulsified oil base with liberal amounts of cayenne and Red #Cancer. So I tend to not be too picky.

Good trick I learned in restaurants though. If you're using a large amount of hot sauce at one time, throw a good size chunk of butter in it before you heat it up. Can mellow out the sauce a little so it hits your tongue smoother.

I'm generally not much of a hot sauce person.  I like heat, but most of the "hot" sauces I've tried have been nothing but vinegar.

I'll load up on Sriracha if I'm at a Vietnamese restaurant, but otherwise I'll just have the spice cooked into the food.  Dave's Insanity is useful for those circumstances when you absolutely have to use some sort of hot sauce in order to get anything out of the food.

Dave's Insanity is wonderful in moderation. Like say, five drops to the gallon of whatever. Watched a friend's dumbass brother pour some on a tortilla chip one time like it was ketchup. After he was done writhing around and throwing up, I kinda felt bad for laughing at him. Sorta.

Of course, down here we have Carolina BBQ sauce, which is basically just hot peppers and vinegar with a little bit of tomato thrown in. YUM, although not really a 'hot sauce'.

For gumbo, I like Louisiana Hot Sauce or Crystal hot sauce. For Mexican, I'll use Cholula if all they have is bottled stuff. One of the local taquerias here has a homemade habanero salsa that makes my forehead break out in a sweat just *thinking* about it.

For personal use, I'm addicted to Sichuan chili oil. I toss a little in all sorts of stuff I'm cooking. Unfortunately, my wife is highly sensitive to capsicum, so I can't use it anything she might eat.
