I don't think every single Catholic country should rush to defend the Papacy, but still, they shouldn't be defenceless. I think the Pope should be considered allied with all other Catholic rulers, or at least with the HRE.

Or how about every catholic country (or maybe you need to have Zealous? Or some other trait) has the option to join the war.

You already have the option to do so actually. You can offer to join the war of people who share your faith.

Th AI of course only does this in defense of holy wars.

AI should have an increased chance to join against blobs too. Atm, the player can easily destabilize an empire, but the AI just won't (it could).
Maybe a faction system for catholicism with popes and stuff could be interesting.

Sengoku, the testbed for Crusader Kings II, actually had a system where a group of smaller powers could form a plot to join together and attack a larger power.  Once the smaller countries had enough overall power, it would launch.  I heard it was quite effective.  It was actually like the current faction system, except involving countries outside the blob.

So I started sending my court chaplain to the Khan's court.

Uh, how often can I send them after they're imprisoned? It seems I only get one shot in a life-time of the khan, and my guys are getting imprisoned within a few days of sending them to the court...

Once per pagan ruler.
So as often as you can "replace" the pagan ruler.   :P

From the looks of it, I'm going to have to get a pretender to the Khanate into my court (somehow), convert him, and wage great war to bring him atop his throne...

A great plan!

In previous versions, random pretenders could pop up in your court (even if culture/religion differed).  I forget if it was because your country was bordering the other country, at war with the other country, both or neither.

Of course, you could always just lose lots of Christian counties to the Great Khan, and should one of his sons make one of those counties his capital, hope the "auto-convert ruler to province religion" event pops up.  Unless that event somehow doesn't work pagan ruler to Christian county (which it very well might not, I suspect it only works with heresies).

As an earl I invited a pretender to my court and fought a war to press his claim.
The pretender is very grateful and owes me no fealty.  I really should have seen that coming.
(Maybe I can get him betrothed to my daughter matrilinearly...)

Not any more.  Once a ruler, the negative reaction to matrilinearly marriage is usually too strong.  However, if you had married him to your daughter matrilinearly prior to pressing his claim, he couldn't have said no.

Is it just me, or is succession the absolute worst thing that could happen to you? Having just conquered most of the British Isles, my old ruler died and the completely rightful heir to the throne naturally became king. But then everyone hated him, a bunch of "X for Skotland" factions popped up, and the Isles basically became just as fragmented as they were before.

But then everyone hated him, a bunch of "X for Skotland" factions popped up, and the Isles basically became just as fragmented as they were before.

Succession is basically the game hitting the reset button.  This isn't always bad except for two things:  there are now a bunch of pretenders, and instead of your nice old long reign bonus, you now have a short reign penalty, which typically drops your levies by a lot.  There are four things I do prepare for my own death and succession:

1.  Educate my heir myself, and make him likable.  Raise his personal diplomacy, give him virtues, and try to last long enough to have an adult male heir.  If possible, try to die with as much prestige and piety as possible as they come with relationship bonuses.

2.  Have a large personal army.  This means retinues, as many and as upgraded provinces as you can manage, and having money to hire mercs.  You want a larger army relative to your vassals.

3.  Try to get as close to the optimal vassal setup as possible, which is no vassals with more than a single duchy, and everyone having only one province under their direct control.  Not everyone agrees with me on this, but in my opinion once you get to this point rebellions should stay manageable especially as your realm grows.

4  Try to be significantly more powerful than your neighbors.  You're going to be having reduced levies as well as internal problems, so you don't want to deal with external threats.

When succession occurs, immediately go into damage control.  Use your council members to improve relationships and your spymaster to discourage vassals from schemes.  Give important vassals honorary titles and distribute gifts to vassals who have near 0 relationships if you think you can afford it.  If your spymaster doesn't like the new ruler fire him.  Look through the vassal tab for powerful vassals who hate you and consider extreme action (plotting to kill, assassination, imprisonment).  Time is on your side; your goal is to get to the point where most of your vassals like you, and the long reign bonus should basically assure that if you survive.

Not sure how much of that advice was obvious; I can never tell with this game.
