I do wonder if you create a doge, would that count as a playable republic?
It would so long as the doge is coastal.

I just preordered.  Republics ho!

No. It has to be a duke level republic bordering a coast. You could create one as a king in theory so you can have the "Merchant Republic of Munster" for example. I'm not sure if they can become "king" tier so it might not be possible to have a "Merchant Republic of Ireland".
I also doubt you'll be able to shift from a feudal dynasty to a merchant dynasty. Apparently merchant dynasties can hold castles without penalty however. Perhaps this indicates a merchant dynasty could shift to a feudal one?

Land locked republics, even duke level, are forbidden.

Doges are only at the duke level.  Count level republics are lord mayors.

Oh, my mistake. I always thought it was doges from count and up.
EDIT: There's also been no mention of Muslim or Pagan controlled merchant republics.

EDIT: Not sure if I'm a fan of the Mediterranean portraits. They all look pretty ugly. The beards are perhaps the best part but I'd rather marry into a Russian dynasty if I want my character to have a fancy beard.

All the portrait DLCs are inferior to the portraits in the base game, IMO, probably because of time constraints. I do like to have more variety though.

King-level republics are Most Serene Republics, like Venice. No idea on empires, though I've seen it happen.

I was talking creating a merchant republic by giving the title to a mayor vassal, I'm aware there's already a king level republic in the game. As far as I know you can't give a title above duke to a non-feudal vassal. In theory if you got a mayor/doge with claims on an empire or kingdom you might be able to force them in a war, would take a lot of micro-management to do so however.
I also believe republics can't form any title above duke currently and the "Most Serene Republic of Venice" is titular rather than de jure.

I wonder what the emperor-level republic name is? If there were a way of getting there, anyway.

Using the power of console commands, the name of a republic with an empire tier is "Grand Prince"
Spoiler (click to show/hide)

EDIT: On the death of the Grand Prince the empire is completely destroyed. If the Grand Prince has a republic holding of count or higher the empire will be inherited by a random courtier. They do not pass down claims. The Grand Prince will also never marry and is more likely to make republics and prince-bishops rather than feudal lords.

I always considered getting this game but I have a feeling it would be for all the wrong reasons.

This game is very much a strategy game right?

Well, you can also role-play or derp around if you want. The AI really isn't competent enough to beat you in anything. Exception is of course a nation which is many times larger than yours from the start, and the Mongols / Aztecs.

I find that it is quite strategic. As Dutchling stated, the challenges come in taking down similarly sized rivals, or even larger ones, by picking your time for wars, peeling off their land piece by piece, and generally messing with them (maybe get them excommunicated, for example).

Why do you feel like you would be buying this game for the wrong reasons?

What I like the most about Crusader Kings is the characters and how fleshed out they are and how they do feel like they are living in the setting.

That is exactly why I'd get it.

Yet, that isn't what the game is about.

Yes, it is, if you play it that way.
