Lime juice can sometimes work, though it's a different flavour.

Also, sugar content is not even remotely close to the deciding factor of a fruit in a dessert; look at rhubarb. Sugar can be (and basically always is) added, even to things that don't need it. From what I've heard, American pumpkin pie is often-as-not pumpkin-flavoured-treacle pie.

It is more that I believe Blargity Blarg that the popularity of Lemon over many of the other citrus fruit has a lot to do with its sugar content. (or possibly that it was once WAY cheaper then a lot of other fruits)

I mean you mentioned Lime which also has a low sugar content (if not no sugar at all... given I've seen it used on diet drinks)

I am actually thinking of doing a Pumpkin Pie

But my recipe doesn't use Pumpking Pie filling... which is apperantly quite rare especially outside of the fall season.

But why would you want to replace lemon, it's so delicious?!

Seriously though, let's look at what makes lemon special; it isn't the sugar content, it's the acidity. Lemon, like all citrus, has a sharp, light flavour, from all its citric acid. Pineapple juice works quite well in a lot of dessert lemon recipes (not so much in savoury :/) as it is likewise a sweet, sharp flavour. That said, lemon is still pretty much irreplaceable outside the citrus family in a lot of dishes, as the citrus flavour is rather characteristic.

The reason why is because outside of lemonaid I actually outright dislike the taste of lemon.

I love Cheesecake. I dislike cheesecake that have a prominant taste of lemon (Honestly... most cheesecake could be called Lemon Cheese cake)

I dislike Lemon pie, Lemon lollypops, and mostly lemon anything other then Lemonaid. Actually I find its smell and taste to be quite bad.

As for "What makes Lemon special" I was comparing it to other Citrus fruits. Though I guess I can't give a lot of credit to Oranges either... THOUGH for the most part I just dislike Orange Zest and Orange Pulp.

Anything I could do to eliminate a Lemon taste and replace it with something I do like I'd take. Heck I am afraid to even make Cheesecake because of how prominant the lemon taste is in nearly all cheese cake and pretty much all homemade cheesecake.

Why are we debating why lemons taste sour? What are you even cooking? (Lazy forumite is lazy and doesn't want to go find it.)

Deserts mostly.

I wanted to find ways around lemon... but from what I understand not only is it impossible, except with lime which is basically an odd lemon, but that no one would know because everyone else loves lemons.

Pies seem to religously need lemon.

Oh, there are plenty of pie based deserts that don't need lemon... you just seem to want lemon free versions of ones where lemon is a core ingredient :P

Make a berry pie, or a chocolate one, etc.

Also as an aside... it's really weird hearing pies talked about as dessert. While Australian english does have some dessert pies in its vocabulary, mostly pie means a small pastry shell filled with savoury meat filling, commonly found at footy matches and anywhere truckers or builders get their lunch.

It is mostly because here meat pies are rather uncommon while any other kind of pie is common. Rather then being a staple meal choice.

Though I find them really delicious.

Though I am surprised there is no sustitute for Lemon...

I mean even Red Current jelly has a substitute.

Lime is a substitute.

Lime is a substitute.

Actually I have to check this.

*Checks internet*

Hmm so Limes arn't baby lemons and can actually be yellow.

Though I am not exactly sure if this is a suitable substitute tastewise but I guess I could try it out. I mean the lime candy is my favorite...

Just be careful... lime is a lot sharper than lemon usually, and not as sweet.

Pumpkin Cheese pies

Citrus fulfills all kinds of chemical roles, mostly thanks to the acid. It 'cooks' the fish in sashimi and reacts with pectin to make jam ('jelly' ::))and marmalade set.

Jam is used here. Though Jelly is usually what people call Jello sometimes.
