DwarfTherapist:

Load DwarfFort.exe and enter your game/save.
Load DwarfTherapist.
Press Read Dwarves.
Assign Labors according to the chart.

Anything beyond that is just for extra-ease (custom professions, nicknames, etc.)
Play with the GUI. There is nothing unintuitive about it.

Yeah it doesn't look to complicated now I've got it installed. The website for Dwarf Therapist also explains assigning labours too so it shouldn't be hard to figure out.

I think i'm finally well prepared enough to begin playing properly. Anything the wiki, tutorials and  info you've already gave me doesn't cover i'll just figure it out myself unless its really confusing me. The only thing annoying me currently is how to un-compress the tilset i'm using. Thanks for all the help! :)
