Rotted diseased bodies would also be good,many countries used bodies of people who died from disease in warfare.(by catapulting them into enemy kindoms etc)

They Are Threw inside castle walls in the hopes of spreading Disease , really , anything that can help the siege is used , even if it was as disgusting as throwing Decapitated Heads To Scare people/spread more disease
