My client just updated and now after I login my entire screen turns grey till I ALT-F4 it

Fixed it. had to re-download and then re-update the exe. Though whenever I log onto the server, I'm called foobar lol

Granted, making fishing rods breaks the server, and sneaking isn't synchronized, but it works fine otherwise

If you don't automatically update to the newest server software, you don't need to.
I'm not sure if there even IS an updated server JAR.  That said...
People with client 1.1.2 can still connect fine to Jaycraft running yesterday's Llamacraft server JAR.

You can make fishing rods without the server admin updating the server software. However, that crashes the game.
That being said, the server software has been updated and fishing rods don't break the game anymore.

Server 2.1 out. Fixes fishing rods for SMP.

Fix?  All it does is add the ID to the array, so having the item appear won't make the server explode.
There's no functionality there to begin with, so it's still not meaningful to have one in the first place.

And with no Llamacraft for the new software, updating is irrelevant unless your clients are bent on blowing the server up.
