You might not have had the personal experience of being griefed (yet), but I can tell you right now, that number is not zero.
Jaycraft's server mod (hMod) has saved us from innumerable griefers (though one or two have made it through our main blocks, they've never stayed for long :V).
I'm sure they've been around on Planehacked too.

I have been greifed. This is not my first server. If I remember correctly, the first server I ever joined was yours.
I am not so sure about that. I have never seen any greifed structures before. There may have been some items tooken from chests, but seeing as I have only seen about 10 unique individuals on Planehacked, I can assure you that the server is rarely, if ever, greifed.

Trust me, this server's been griefed before. I had to deal with some of them.

That said, servers like ours are safe from griefers mostly because of our relative obscurity. Yay for that, I guess.

Just got off the temp server. Added a large work-in-progress base. Right now, it has a Crafts and Storage area, a Tree Farm, a Mine Shaft, as well as a Community Chest. And, of course, a main hall. Anyone is welcome to add to it, I am using it as the community main base. If the new server isnt up soon, I'm going to be adding a farming area as well as a garbage dump :3

Oh, and whoever made that pit that goes all the way to bedrock, I constructed a little building around it in order to mark its location a little better, and so you cant just fall in.

and theres an altar on the mountain with a bunch of 'sacrificed' leather from some silliness the day before.

Yes, the temp server is up during the evening, but planehacked has been down for a while. Should be up soon, I guess.

Its up. I'll add biomemod to it if anyone wants it and could show me how to do that easily. biomemod doesn't work yet, not updated.

I'd leave it on all all the time, but then you guys would have to deal with it suddenly going kaput as soon as my laptop runs out of battery.
