Namely withstanding water pressure of over 700 PSI and also remaining on his feet after losing one hundred and twenty men's worth of blood. Also, the Esper section on the Terra Branford article only said that the stats double, nothing about running around the planet in a few minutes.

ok... that's not impressive. So he has a stupid amount of blood(which must be under a lot of pressure... cutting him would cause a fountain of blood), how does this help him in a fight?

You don't have to be impressed, you have to try and stay afloat in the lake of blood. In the text, Gilgamesh is just fine afterwards, and as strong as ever. Therefore, he can't be killed by tiny cuts. You would have to hack him apart to disable him, and the parts connected to his brain would still have blood! I assume that the hacked off sections would still be shooting out blood at insane velocities.
