Do you use dedicated haulers?

I haven't figured out if I should use several peasants for only hauling, and just disable it for everyone else. Is this a good idea?

Weell, I just create new work/jobs until the desired amount of dwarves are idling. These idling dwarves are the haulers.

I have a system for this.  It's fairly simple, maybe a bit wrong-headed, but it gets the job(s) done relatively quickly:  Anyone who will be performing an important, or full-time, task, like miners, masons (rock doors, cabinets, blocks on repeat), carpenters (beds, barrels, BINS BINS BINS), the manager, and the bookkeeper, I disable most or all hauling tasks for.  Everyone else, especially fresh spearcatchers migrants get at least Masonry (construction team, remember to set a few Mason's Shops min. skill above Novice), Stone Detailing (smoothing floors and walls EVERYWHERE), Mechanics (constructing and loading traps quickly and efficiently), and every hauling task available.  This should allow you to tackle any large resource relocation or room improvement with minimal hassle.

I'm very situational with my hauling.  From the start I keep everyone with all hauling options on, then as priorities for particular jobs stack up I'll individually ween them off hauling.  naturally most of my masons, cooks, miners, and various workshop workers all lose many hauling jobs but I keep enough dwarves in all categories who still do all hauling jobs.

Also I always make sure even if I turn off almost all the hauling jobs to make a particular worker more efficient, I still leave on a few respective jobs.  Miners will haul stone, hunters/rangers haul animals and refuse, masons and carpenters haul furniture (actually I leave furniture on for alot of them anyway, because when I want something built it WILL get done) etc. I only make complete exceptions for my most important/favorite dwarves, and doctors generally have almost no hauling.

No matter what though, I never turn off burial and cleaning for any dwarves.

It's disorganized and sort of lazy, but It's never given me any problems.

Doing the same than the people who posted before: when a dwarf becomes important (moods especially) he gets the hauls off.
Same with the broker/manager/arsenal dwarf.

Yeah. I have dedicated haulers. And when the fort gets really big. I have very specific haulers. Like this guy is burrowed here, to take wine barrels to stockpile A, and another guy bringing plants to stockpile B to be made into wine. I have guys who bring just wood in, guys who build all my buildings, like doors, and stuff. So on and so forth.

I just let everyone I don't need for a special task idle in the meeting room, so there are always 20-50 idle milkers and whatnot who mostly do the hauling jobs. Dedicated (and trained) haulers might be much more efficient, but with the primitive interface we currently have it takes forever to micromanage all the workers. If you could see all skills and activate/deactivate all jobs of all workers on one single screen, maybe even assign workers into useful user defined profession groups there, it were a matter of seconds and no big deal.

You just described Dwarf Therapist :)

Dwarf Therapist is pretty much a must-have in my book.  All other utilities are mere conveniences, DT, on the other hand, actually makes the game playable for me.

Dwarves with large-scale tasks, such as miners, masons (during construction projects), and engravers, don't have hauling enabled. Dwarves with lesser skills, such as arms manufacturing and furniture making, get hauling. If I get a fresh wave of immigrants and I need more hauling done than is currently being hauled, I'll make a couple of them haulers.

People can get used to anything.  Once you have used dwarf therapist, however, going and changing jobs on 50 dwarves manually just becomes tedious and inefficient.  I mean it is a matter of spending 10 minutes going through each dwarf, or 30 seconds going down the list in DT.

As a mac user, I have no choice but the default interface at the moment.  I really don't mind it though.  Each new immigrant wave, I look at how many dwarves I have, figure out how I would ideally assign jobs (I tend to super specialize, with one job per dwarf as soon as I have enough dwarves), and then just go down the list of dwarves and assign each dwarf labors based on their best skills. I keep a text file with all the dwarves and after about the third wave I only have to add jobs to the new ones as the old ones are by then in their permanent roles.

To answer the OP I definitely use dedicated haulers.  And as someone else mentioned, in an older fortress I have dedicated food haulers, dedicated wood haulers, dedicated stone haulers, etc.

I use tons of dedicated haulers.  Most are general purpose haulers, but there are a few specialists.  Primarily it's rock-hounds - I build up their strength and have them haul ore out of the mines, and stone-hauling is turned off for everyone else.  Depending on my needs, I may also have a few other specialists, but typically only for special things, like log hauling (I make sure they don't have cave adaption).  My general-purpose haulers also all have jobs enabled that only come up occasionally, but need to be done right away, like butchery and tanning.  I also always have a few dedicated food haulers because I got tired of food rotting in the kitchen.

I usually have 2-3 haulers per actual worker.
