Probably so that you'll give in and buy new ink. I'm skeptical that the rate of decay of printer ink would be so short that an expiration date makes sense, but I've not done the research on that.

I've asked the same questions, and here are the answers I was given from HP:

A) Ink is considered "Consumable" and therefore needs an expiration date of no more than two years from the manufacture date in the state of New Jersey. Not knowing which packs are headed to NJ, they just label them all to be safe, rather than lose an entire state's worth of sales. (This is the same reason bottled water has an expiration date.)

B) The chip in the cartridge knows that the ink is past its expiration date. Most of the time it just complains that you're using "expired" ink and just prints anyway, depending on brand. (Kodak are serious hardasses about it, whereas Lexmark could give a crap.)

Heads up, if you're using Epson, don't leave it unsealed. They use alcohol based inks, which tend to evaporate about a month after you put them in the printer.

Also: Earnings reports yesterday: HP bleeding money. Oracle earning money like a boss. Cue rumors that Oracle might buy the soon-to-be-truncated HP. Guess who's the #2 guy over at Oracle (and effectively the day-to-day #1 since Larry Ellison doesn't get his hands dirty with operational details)? Mark-fucking-Hurd, the former CEO of HP who got booted for embezzling money to pay his softcore porn actress-turned-business consultant. And when I say "booted", I mean he got his contract bought out to the tunes of $75 million dollars. He then promptly got hired by Oracle for about $200 million dollars.

If this douchebag becomes my uber-boss again.....gaaAAAAAAAAAHHHHHHHH.
