I usually choose either hauler or agile first. Hauler to carry more stuff and agile so I don't miss those new fast skeletons on the first strike.

x2, I can give you a quick rundown.

Agile-Good for if you want to be able to defend yourself against skeletons.
Firearms- Not so much a good skill unless you can find lots of guns.
Medic- Makes those little bandages you find much more effective.
High Stam- Allows you to run away longer and break more furniture and stuff at a time.
Leadership-Utterly useless at this point, it seems. They're just meatbags.
Carpentry- Helps when you have tons of planks and have a powerful zombie after you. Best way is to close door/window and then barricade it. It holds them off longer than the usual plank'n'run.
Hauler- Allows you to keep one extra item, which is good. Keeps you from making that frustrating choice--Weapon or food?

The rest are more late-game, when you know your surroundings.

I know it's a pipe dream, but an online version of this would be incredible.  Fifteen or twenty (or more?) players on a server, scattered throughout the city.  Find cell phones and coordinate, try to meet each other somewhere.  Get turned into a zombie and hunt your companions.

I personally wish using a store as a fortress was harder and more eventful, as of now I just eat everything and move on.

Medic is best paired with Tough, unless you plan on finding a lot of Green Pills(which makes it quite useful, assuming it works on pills). Medkits restore a base of 5HP, half of your starting max. The at less than 5HP, the extra missing point or two isn't going to kill you*.

Light Eater is good for extending your finite food supplies(note, it makes groceries restore more, not increasing your food stat). The one that increases your Max Sleep is somewhat useless, since it just means you have to sleep longer to fill it up as well. High Stam also helps if you're a melee fighter. Strong is sort of useless. I've never really use it, but I still sucessfully fight with melee weapons.

*Exception: Shit happens.

Urban Dead/Quarantine 2019?
Basically the same experience you just described.
Anyways, this game is pretty fun, except it seems like Zombie Masters spawn too much/too early? Like, I often leave the first building and find one jumping over cars at me :(

No, Urban Dead isn't fun.  Quarantine 2019 doesn't look fun either.  If I play a game, I want to play it until I have something else to do, not until the game decides I've played enough.

Well in my current game I grabbed a baseball bat, a cell phone, 6 planks, 1 thing of food, and a medkit. I then ran to the shopping district and I'm barricaded up in a food shop with 7 things of food and 3 hunting rifles. Woo.
