It would happen automatically, I think, if you had no graveyardable coffins and no dead things waiting for coffins immediately before the mood. Just build the coffin, make it usable, and it should automatically be assigned to the dead dwarf even though there's no body.

Guppy bone toy knife. Had the lowest possibly artifact value and its a TOY!!! You cant even use it in battle!!! In short, an alunite millstone, an obsidian quern, and a hoary marmot leather shoe with the quern on it.

It doesn't matter as much in 31.xx, but you do realize that metal crossbows hold very little advantage over bone ones, and using the bowyer instead of making metal ones will save you resources and get your army equipped faster, right?
