Cage trapped animals....

How do I get them to the butcher? I can't seem to find a way to turn it into parts.

Once they are in a cage, you have to tame them and then butcher them.
To tame, build a kennel and queue a "tame a large animal" job.
To butcher, go into z->animals, scroll down and hit b.

If they don't show up in the kennel's tame a large animal menu, you've got either one that can't be tamed at all, or it is pet_exotic and can't be tamed till a Dungeon Master shows.  In either case, if you want to butcher them you'll have to let them out and have your dwarves kill them, or perhaps use a drowning pit if they're not swims_innate.
