Taxidermist profession

This profession would IMO fit perfectly within the universe of Dwarf Fortress. It would provide a wonderful use for all those dead animals. Dead cats could be turned into wonderful trophies. What better gift for a dwarf than to build a trophy out of the cougar he just killed and build it in his room? Or how about a stuffed Forgotten Beast at the entrance of your Fort? Stuffing a beast could be an alternative to butchering it. You would lose the hide and the bones but keep the meat.

The best part: artifact trophies. This link got me thinking about the kind of wonderful/disturbing creations that could come out of the workshops of moody dwarves: http://www.environmentalgraffiti.com/news-weirdest-and-creepiest-taxidermy-artworks-ever (*Creepy taxidermy warning*) These are definitely artifacts or maybe just stuffed Forgottent Beasts. You decide.

A taxiderm'd trophy would be made from the whole corpse, I'd think.
