I'm building a tunnel that will eventually be covered with water, in 40d.  But in order to make this tunnel, I used glass to block the water, and want the tunnel to be sloped up to a peak with ramps.  This leaves an "open" space of sorts on top the glass windows, which I am covering with ramps to make the slope.

My question is, will the ramps stop the water from flooding the tunnel, or will it "seep" in, so to speak?

As far as I can tell, ramps act like floors in respect to blocking water.  So they won't stop water flowing into and out of the tile from the sides or above, but *should* stop it from flowing down from the ramp tile to the open space below.  I'd recommend building walls in the tiles under the ramps anyway.

I'm having trouble picturing your arrangement here.  Are the ramps on top or below?  Water doesn't seem to flow through ramps with pressure.

That is a row of glass windows, with ramps situated atop them, and walls behind the ramps.  Since windows don't make an actual "floor" a level above, I was hoping the ramps would stem the flow flow of the water. from rushing into the tunnels "through" the ramps.
