Ah, try adding
[BODY_DETAIL_PLAN:SHELL_POSITIONS]
To your Body detail plans.

No that didn't seem to work either.  Any specific place it's supposed to go?  I just stuck it in like all the other BODY_DETAIL_PLAN tags.  Perhaps it needs something before Shell_positions?  Like 'standard' or 'humanoid'?

Well cows have an upper body, so it should stick on easily.
You might want to make hoofs shellable while I figure this one out.

Perhaps something related to how the game 'sees' the object?  Because it doesn't crash at the items creation, just when I try to see it in a menu.

That should be defined with
[USE_MATERIAL_TEMPLATE:SHELL:SHELL_TEMPLATE]
I'm praying that it isn't that you produced glitched shells, and now no matter what mods we apply that willc rash things, because that would be too much fun.

Well I replaced the modded file with the original and that fixed it so it didn't crash.  The things in the butcher shop are horns, hoofs, and bones, all from a bull.

Ok so I dumped all the stuff that was in there previously, saved, replaced the modded file back into the raw, butchered a new cow, and now it seems to be working.  I guess it just didn't like changing the already existing stuff.
