Assign them to squads through the military (m) screen. Next, open up the squad screen (s) and the button for the order should be there.

In general, think of your dwarves as automatons rather than controllable entities. You configure their labor preferences and then designate jobs that use those labors and the dwarves will go to work.

In the case of attacking, you just make a military squad and station them near the unfriendly thing you want killed. They may or may not go and kill it. :D If you want to kill wildlife there's no way to specifically order one to be killed but you can setup a hunter who will slowly exterminate all wildlife.

Note that all applied to the previous version that we call '40d'. In the new version there is a kill order.
