I get like, 2 troglodytes, rarely a troll, and some bird thing only every season or two.

Are there not supposed to be like, SIEGES of trolls and troglodytes?
Is there a way to make more?

There sometimes are. I've seen swarms of trogs before. About a dozen trogs all came onto the map in one huge group. They don't have the siege AI and instead function more like wild animals, but they did attack anything that came nearby.

Seems very random, and may also depend on your worldgen.

I usually set my squads to kill order whatever's down there until I get something very formidable, like a groups of nearly 15 crundles, those I let wander into my cage traps

Are they also hidden? I found a body of a dead cave swallow man with no combat reports that I did it, and it was not there before because I was going to make a wall around there to allow a more 'Controlled' entry of everything.

Other things can kill them, and they can even die of old age.

1.I might make a gigantic opening of ramps to the earth.
(4 ramps then a 4x4 long hallway then repeat till surface, path over anything in the way.)

Demon Temple and make the opening lead to the outside, after that, open the glowing floor by taking the weapon, dashing out of there, close all entry to my fort, and let the demons roam free.

3.See if there is anything beyond hell, maybe you reach the other side of the map and have an upside down kinda thing!
4.Have "fun"

There are several different degrees of cavern. Sometimes you will find a cavern that only contains a few creatures and is 'easier' and sometimes you will find a cavern that contains several packs of creatures and/or a forgotten beast, which can be 'harder'. Usually, the harder ones will contain more monsters, but really, it's down to whether you find monsters that hunt in packs of you want more meat, I would guess, following the general rule of more creatures = more meat, unless they're whales.
