It mentions creatures, but not vermin. As far as I know, vermin can't attack, so how would it work?

Given that cave spiders are vermin, and have a syndrome, I'd say it is possible, and that you should use these as a basis. Admittedly, I haven't seen cave spider bites yet.

I took a look at cave spiders also, and found this tag;

I'm guessing the 10 is a percentage number, since cave spiders don't bite every person they interact with - but even cranking it up to 100, the criteria for triggering the bite-chance-roll is unknown.
