You keep saying I suck, but I can't hear you because my camera is always facing the wrong way and the turn buttons are way out of my way.

Can't roll out... ? Barrel roll?  Ditch dive?  Wielding a blocking weapon?
I've never had this problem you got, getting chain trampled.

Eh. I have in Forest & Hills. To the point of death.
Sometimes there's no window between the getting-up animation and being knocked flying. They all home in on you so if the timing's right you're just screwed, and they do a ton of damage early on.

For what it's worth they hurt a lot less when you get good armor. :/

Working on the better armor.  I don't quit games when they piss me off, I beat them into submission and make them play my way.

Fighting the second Yian Kut-ku.  Why does your guy flex his muscles every time he uses a healing item?  Is it to be cute?  Because the novelty wears off when there's a monster charging you and your guy is showing off his low-polygon-count biceps.

I'm guessing they put it in for balancing.
Why did they use such a silly animation? I haven't a clue.

You'll get the hang of the timing eventually; if all else fails, you can still leave the area and run back.

Always been like that.  Could think of it as the "I feel great!" animation.  I suppose its also designed so that you think before using your potion.  You take critical damage while in that animation...

Gotta pay attention to the giant monster you are trying to kill for parts... and know when to run..

Definitely gonna be getting this. I stopped playing monster hunter 1 because i would never get to play with other people and many of the games best equipment required you to be online. The servers for it were taken down years ago.

So you can't spam potions. As for their choice in animation... eh. It's not bad.

I think I must be behind the curve or something.  I'm fighting the Cephadrome, and I have full Hunter's Armor and the greatsword with the piscine teeth on it.  It's doing like a quarter of my health with each swing, and it doesn't help that the cephalos in the area love to troll me by swimming up and just sitting there, right in front of me, so I can't move properly.

Either way, I'm getting Velociprey Armor before I do the Cephadrome again.

I'm guessing you're using the agito line? You can bring that up to the dragon agito with a bit more grinding.

When you're facing cephalos(cephali?) bring sonic bombs and the materials to make sonic bombs if possible. There's a couple in the equipment chest at the start I believe.

If you don't want to grind for the materials, you can use small barrel bombs for the same effect, though you'll have to take timing into consideration.

I was going to say you shouldn't be getting hit with tailswings if you're abusing the rolling/dodging properly, but it occured to me I've never used a greatsword and don't even know if they can roll or how well. :/

If you can kill Kut-ku reliably and don't mind stylin' in pink, try making the kut-ku mail and tasset and vambraces. It'll have higher defense and if you wear them together you get an inherent attack up bonus.

Is there a way to just go out and gather/hunt without taking a quest?

No.
EDIT: And as for fighting the Cephadrome are you aware that wyverns are more vulnerable to damage in certain areas of their body?
