Pick up that Crossbows of Cyrodiil mod and make a crossbow sniper, with a dagger or shortsword as backup. Wear light armor and some dabbling in illusion magic, along with other thieving skills and speechcraft/mercantile.

I agree wholeheartedly with both of the above. 

As for mods, Open Better Cities, assuming your computer can handle it.

(Reminds me that I'm really going to have to see if I can do a translation of Schifffahrt in Cyrodiil sometime... I suppose you could use that one as well if you happen to know German.  :P )

The trouble with Open Cities is that it breaks a hell of a lot of mods, and I doubt my computer could - either.

What's that mod about? It sounds awesome "pilotable pirate ship".

I vote for a Breton Mage with a side-focus on warrior. Go with the Mage Starsign.

Edit: Or, if as you say, you get problems with too little Magicka, go with the Apprentice sign, and try to find something to negate that weakness to magic.

What's that mod about? It sounds awesome "pilotable pirate ship".

Basically, it lets you buy some small ships and sail them around, and also lets you use rowboats.  Bit buggy, though, and you have to know German to have an idea of how to use them.

Magicka isn't a problem: you just need a spell to temporarily increase your magicka cap before you use your spells.

Go argonian with thief sign, custom class with endurance and luck as primary abilities, markman and sneak as skills for sneaky type, other skills as you wish though I recommend heavy armour, mercantile, armourer and security.

If we're going archery, I'm installing a bunch of stealth mods that will make it harder and therefore necessary for light armour. :3

Just a small thing, but, well, the way the game generates monsters, I find that if I want any of the NPCs to live I need to pick skills that you will never, ever, find yourself needing to use for something. And alchemist mages have plenty of mana...
