Why is the shadow now not two smaller shadows?

Probably because Shadow was made by Coyote and as such can't be destroyed with any of his weapons wielded by another. A sort of safety guard if somebody he didn't like got their hands on his tooth.

There's no two smaller shadows because it didn't cut Shadow, neither through or into or in any way. It cut in between the shadow and the ground it lay on, separating the two of them.

That said, the update makes it clear that it hurt shadow, presumably because he's not supposed to be 3-dimensional.
